Ingredients:
- 1 & 1/2 cups very warm water
- 1 tablespoon dry yeast
- 2 tablespoons honey
- 1 teaspoon kosher salt
- 2 cups whole wheat flour
- 2 cups unbleached all-purpose flour
Directions:
- Dissolve yeast in water in a large bowl (or mixer bowl)
- Add honey, salt, and both flours
- Using the bread hook attachment mix
- Once a ball forms knead for 3 minutes
- Place ball in a well oiled glass bowl
- Cover bowl with tin foil
- Heat oven to broil for 2 minutes - turn off oven
- Place bowl into oven and let rise for an hour and a half
- Punch down
- Form into a loaf
- Place on a greased pizza stone
- Let rise for 15 minutes
- Bake at 400 degrees for 15 to 20 minutes until golden brown
