Molasses Whole Wheat Bread

Happy Monday everyone. I hope that you had a wonderful weekend. I know that mine flew by. These weekends never seem to be long enough. Oh well. Here is some bread I made from one of the cook books I picked up on my adventures on Saturday.

Ingredients:

  • 1 Package dry yeast

  • 1/4 cup warm water

  • 1/2 cup molasses

  • 1 - 1/2 cups skim milk, warm

  • 2 tablespoons unsalted butter, melted

  • 2 teaspoons salt

  • 6 cups whole wheat flour

Directions:

  • Sprinkle yeast into the 1/4 cup of warm water to dissolve

  • Set aside

  • In a large bowl combine molasses, milk, melted butter, and salt

  • Mix until well blended

  • Stir in dissolved yeast

  • Add flour 1 cup at a time, beating well after each addition.

  • Until dough becomes stiff

  • Turn dough onto floured bread board.

  • Knead until smooth and elastic (8-10 minutes)

  • Place dough ball in greased bowl.

  • Cover with damp cloth

  • Set in warm place and allow to rise to double in size (1 hour)

  • Punch down

  • Knead for 2 to 3 minutes

  • Divided into two oval loaves

  • Place in greased 9x5-inch loaf pans

  • Brush tops with butter

  • Cover pans and set in a warm place until dough is double in size

  • Bake in preheated 375 degree oven for 40 minutes
