We had all these leftover vegetables and some vegetable broth and stock from other recipes.
We didn't want them to go bad so we put them all together with some homemade turkey sausage.
Ingredients:
- 1 pound ground turkey
- Italian seasoning
- Dried Parsley
- a dash of cumin
- a dash of chili powder
- a tablespoon of crushed chilies
- 2 yellow onions, diced
- 5 cloves of garlic, diced
- 3 small orange bell peppers
- 1 can diced tomatoes
- 1 can black beans, drained and rinsed
- 2 diced carrots
- 1/2 cup green beans, chopped
- 2 potatoes, diced
- Fresh sage and thyme, chopped
- salt and pepper to taste
- a dash of habanero powder
- 1 teaspoon marjoram
- Enough Vegetable broth and stock to cover all the ingredients
Directions:
- Combine Turkey and first 5 seasonings.
- Heat some olive oil in a pan
- Cook turkey sausage until brown
- Place turkey sausage in a dutch oven or casserole
- Add some of the stock
- Saute onions and garlic until onions are golden
- Add Carrots
- Add Green Beans
- Add Tomatoes and Bell peppers
- Add can of black beans
- Add fresh herbs and spices
- Add Potatoes
- Add the rest of the vegetable broth and or stock
- Bring to a boil
- Turn heat down low and simmer for an hour
